The extra virgin olive oil Designation of Origin "Aceite Campo de Calatrava" is derived from Picual Cornicabra and by mechanical or other means, but do not alter the oil, preserving the flavor, aroma and fruit characteristics from which it derives.
The color of the oils can vary depending on the time of the olive harvest, ranging from bright green to yellow green.
The oils produced in this D.O. have marked presence of fruity green olive, apple and other fresh fruits.
El Campo de Calatrava is a transition zone between Toledo (variety Cornicabra) and Jaén (Picual). This assembly of the two varieties is their greatest hallmark.
These oils have an acidity of not more than 0.5 degrees, a peroxide value less than 15, and humidity and impurities of less than 0.1%.
The contribution of these two varieties protected Denomination of Origin from the sensory point of view are their sensory profiles with complex fruity and intense. Are significant and balanced perception of bitter and spicy on the palate, with values ranging from 3 to 6, due to a high polyphenol content.
By doing a tasting on the sides of the tongue perceives taste bitter fruit elegant, feel which is enhanced by ingesting the oil, showing a spicy sensation in the throat .. For retronasal persists and prevails olive flavor and fruity nuances exquisite and leave a final time. |
