Extra virgin olive oil that comes from olive fruit of the species Olea Europea L., from different varieties of olive trees in the area: Picual, which is the majority, also called Salgar, Cornicabra, and to a lesser extent, Arbequina,Picudo and Manzanilla, by mechanical or other physical means which do not produce changes in the oil, keeping the flavor, aroma and characteristics of the fruit that comes.
The oils D.O. Montes de Alcaraz oil should be characterized as "extra virgin"with a maximum acidity of 0.5 º, a peroxide than 15 and less than 0.1% moisture and impurities.
Present daily average fruity (green or mature depending on the time of collection) featured bitter and spicy with nuances of the variety of priority, and high school Picual, Cornicabra (with aromas of green leaf and even tomato plant ) and to a lesser extent, apple, almond, fig, banana, etc., typical of other varieties. The oils are balanced with maintaining a consistent line and proportion, both fruity and in the intensities of bitter and spicy.
The color varies, depending on the time of collection and geographic location within the region, from golden yellow to yellow-green.
Have a high content of oleic and stearic acid, which confers a high stability and low linoleic, linolenic and palmitic qualities given by the main variety, the Picual. |
