The extra virgin olive oil with Designation of Origin ALCARRIA OIL is made exclusively from Spanish olive variety in many places is also known as Verdeja, this variety of Spanish olives or Verdeja. This variety is endemic to the region of the Alcarria. 95% of the national production of this variety is produced in the Barren plateau, which ensures a final product with its own characteristics and different from other oils.
Alcarria.El oil extra virgin olive oil is obtained by mechanical or other physical means which do not produce changes in the oil, with a maximum acidity of 0.7 º, a peroxide and a maximum 15 percent moisture and less than 0.1% impurity.
The oils produced are unctuous, very balanced and healthy. The predominant color in the oil of the PDO OIL ALCARRIA is lime green, more or less intense depending on the time of harvest and the degree of ripeness of the olives. From the organoleptic point of view of this variety oils are fruity and aromatic smell emphatic in his sheet, in which are intermingled flavors of grass, hazelnut and banana, sometimes spicy taste in the mouth.
The soil and climate of the area have done a great deal of natural selection to be this region of the Alcarria the only one that is present this virgin olive oil, from the Spanish variety, also known as Verdeja. |
