The main variety of olive Designation of Origin "Antequera" is the native Hojiblanca, which accounts for over 90% of the oil and presented a balanced, neither too bitter nor too sweet, which has made them much among consumers. There are other varieties such as minority or Martene Picual, the Arbequina, the Lechin, some originating in this land where the olive tree is almost a monoculture, as Gordalilla or Romerillo Archidona.
Olive groves are located at altitudes ranging between 450 and 600 meters high, medium soil depth in very chalky.
The climate is Mediterranean and continental. There is much thermal contrast between summer and winter, as well as overnight. Low temperatures in winter make the olive maturation is delayed. This causes a modification of acidic profiles of oils, increasing levels of oleic acid at the expense of saturated and unsaturated fatty acids.
Under these conditions Hojiblanca is adapted perfectly, with this district the great broadcaster of this variety in Spain.
90% of the olive tree is dry. Cultivation practices are traditional and always respecting the environment. The extra virgin olive oil is obtained from healthy, ripe fruit, collected directly from the tree using traditional methods of shaking, mechanical vibration or mechanical vibration and joint beating. The milling is carried out within 48 hours after collection.
The characteristics of these oils will mark the Hojiblanca. Are moderately stable thanks to its high concentrations of tocopherols, being very rich in vitamin E.
In the organoleptic are light oils in the mouth. Present a range of fruity aromas of green olives, other ripe fruit, almond, banana and green grass. The intensities of the fruits are medium to high. Besides the bitter and spicy appears with varying intensities of light to medium, which exist in perfect harmony with slightly sweet flavors.
Oils under the brand protected designation of origin as "Antequera" will necessarily be extra virgin olive oils and are of two types: Intense Flavor (0.3 °) and mild flavor (0.5 º). |
