The Denomination of Origin "Baena" protects the olive oil is traditionally designated geographical name. Oil production is carried out, always under the control of the Control Board in the various mills listed in the designation of origin.
The amount of oil qualified by the regulatory body is around two million kilos of extra virgin olive oil that are sold by the brands covered in this appellation.
The packaging is also controlled by the Control Board and must be performed inthe packaging plants listed in the registers of the Denomination of Origin "Baena. " Losenvases have to be made of glass or tin, and lead the numbered and attached proporcionadaspor Control Board.
The density per hectare is approximately 100 trees and the olive harvest is done by "milking " (pick the fruit from the tree), by "shaking" (shake the branches with sticks of wood) and "vibration" (the tree trunk is held by a machine that vibrates).
The oil from "Baena" is fruity and very aromatic. Depending on which olives have been picked unripe or ripe, so will the color of oil, more green or yellow. The main variety is the barracuda, and accompany other varieties such as: Lechin, Chorúa, Fowler, and Picual Hojiblanca. All oil output at the special features area of great finesse and personality.
