For the preparation of the oils protected by the Denomination of Origin Oil Campo de Montiel is used exclusively Picual olives, Cornicabra, Manzanilla and Arbequina Center. The olive varieties of the Appellation of Origin Montiel Oil Field are: Picual and Cornicabra. The extra virgin oil is obtained by mechanical or other physical means which do not produce changes in the oil, keeping the flavor, aroma and fruit characteristics of whom come.
The specific characteristics of Campo de Montiel oil due to the natural mixture of varieties and Picual Cornicabra majority, they transfer them featured bitter and spicy positive attributes of the oils, present as significant values organoleptic assessment, including for the bitterness between 3 and 6, for the itching from 3.4 to 6.3, and to a lesser extent, apple, almond, typical of other varieties.
The Association for the Advancement of Campo de Montiel Oil ensured through inspection and certification systems external to the designation of origin, traceability, health and food security of extra virgin olive oils protected by the Denomination of Origin Oil Campo de Montiel .
All agricultural practices from the work during the crop harvesting and transport, to subscribers, and pruning treatments and milling, extraction and storage of oils, are regulated and subject to compliance with codes of good agricultural practice and food, at stages of production, processing, storage, packaging, etc. |
