The variety Lechin, is occupied almost 50% of olive acreage. It is a vigorous variety, carried umbrella-shaped, repilo resistant and suitable for calcareous soils. Is productive and early maturing. This is the flagship strain is going to contribute more to these qualities of oil. The oils are low in tocopherol, which compensates with a high content of polyphenols and provides a very stable oil. Varieties in the area in order of importance: Lechin, followed by Manzanilla, Verdial, Hojiblanca, Picual, Alamenos and Arbequina. The oils of this Denomination of Origin have impeccable taste and odor characteristic of the region Sierra de Cadiz, fruity aroma and intense green or ripe olives, reminiscent of wild fruits and aromas, taste slightly bitter and spicy balanced outcome at palate. It is a virgin olive oil of excellent quality, clear, clean and low acidity. From the culinary point of view is an oil that goes a long way in the pan. |
