Sierra de Segura

 |
The Sierra de Segura occupies the northeast of the province
Jaén, bordering Ciudad Real, Albacete, and Granada. His
terrain is rugged, with an average altitude of 800 m
with a continental climate of hot summers and winters
very cold.
Like much of the province of Jaén, main
Spain and producing olive oil reference level
global culture of the region of Sierra de Segura is
closely linked to the grove, without which it would be understood. The
Olive wood is not only an extraordinary social value
economic but also ecological and landscape. In many cases, even the olive trees
are interspersed with pine trees.
The Denomination of Origin covers only extra virgin olive oil
obtained from the Picual (also known as Martene, Loperena or
Nevadillo), as principal, with 97% of the area, and Manzanillo varieties
Jaén, Royal and Verdala. Regulation states that the oils protected should
be prepared at least 90% with the Picual.
From the organoleptic point of view, these oils have yellow-colored
green, are fruity and aromatic, slightly bitter and spicy with a great
stability, so it can be stored for longer. |
