The harvesting of the olives starts in October, always placing quality before any other consideration. The milling of the fruit is done in a few hours of collection at low temperature, and bearing in mind the hygiene of the process.
The varieties are separated, resulting in oil-grown, monovarietals, premium quality, according to the rules, always fresh and able to awaken the senses. Olive varieties cultivated are: vidueña, lechín, arbequina, pico limón, gordalilla, marteña and manzanilla. The extra virgin olive oils that result, complete a range of colors, aromas and flavors. Appropriate to investigate in the kitchen and meet the diverse and demanding palates.

From olives of variety 'Gordalilla', collection at the beginning of ripening (turning color) in the month of November. Green in color light turning to pistachio green, fresh fruit smell, with hints of flowers. In flavor highlights the sweet component, is fresh and slightly peppery.
From olives of variety 'Arbequina', collection at the beginning of ripening (turning color) in the month of November. Golden Light green in color and flavor to fresh fruits, lighter shades a highlight apples, herbs and flowers, of great intensity. Sweet and soft on the palate. A little peppery at the end.
