Helped by the best technical means and under the strictest quality controls, Mueloliva performed the delicate extraction technique. The mass of the olive bat in cold, decant through of the filter only 10% of all the oil it contains. That small percentage is called the 'flower of the oil' or 'oleum viride'.
After a rest of 15 days in the silence of decantation vessels, will precipitate the solid residues leaving on the surface which is considered one of the best oils in the world.
Organoleptic characteristics of oil:
In nose is characterized by an intense aroma to the fruit has (olive green), highligh the smell of almond and freshly mown grass. Also it detected a complex range of aromas where it include apple and green tomato.
In the mouth it is pleasant and persistent, well-endowed with structure, tasty, highligh the bitter and peppery, typical of the combination of picuda and hojiblanca varieties, present in the oil of Mueloliva.
